Enjoy a light-bodied pinot noir from the Willamette Valley while viewing a fun video on the ins and outs of wine tasting by a certified sommelier and creator of the NYT Bestseller, Wine Folly: The Essential Guide to Wine.
Then Fairwinds’ Dan Vogt, Manager of Food & Beverages, will give you an introduction to the three wines that he and Shawn Sannes, Head Chef, have expertly paired to accompany the menu. Shawn will describe the three small plates in more detail:
- Roasted Salmon Filet with tomato buerre blanc and
parmesan herb risotto, arugula salad
- Seared Lamb Chops with potato croquette and grilled
asparagus and oyster mushrooms, Szechuan glaze
- Filo-wrapped Brie, apple compote, jelly, balsamic
reduction, frisee, candied nuts
